
I’ve been slowly making my way through Dinner Tonight by Alex Snodgrass, and my experience with it has been a little different from what you might expect from the title.
While the book suggests easy weeknight dinners, I personally haven’t found these meals to be particularly quick—and honestly, I don’t mind that at all. Instead, they’ve become more of a weekend ritual for me.
Rather than rushing through dinner after a long day, I turn the whole process into an experience. I’ll plan the recipe, take my time shopping for the ingredients, do the prep slowly, cook without feeling rushed, and then sit down and really enjoy the meal. In that way, these recipes feel less like “get dinner on the table fast” meals and more like a form of kitchen therapy.
The Ingredients
One thing I’ve noticed about the cookbook, Dinner Tonight by Alex Snodgrass, is that some recipes call for ingredients I wouldn’t normally have on hand. Sometimes that’s part of the fun—it introduces me to new things.
For example, one recipe had me buying tapioca flour, which I don’t typically keep in my pantry. It’s used as a thickener instead of the more common cornstarch. I later learned that tapioca flour is often considered a cleaner or healthier alternative, so it ended up being a nice discovery.
Still, there are moments when I wish a few ingredients were a bit more common—but if you enjoy experimenting in the kitchen, it can also make the recipes feel more special.
Recipes I’ve Tried So Far
So far, I’ve made a few dishes from the book, and each one has had really strong flavor.

Creamy Dijon Penne with Kielbasa
This one was good overall, but the Dijon was a little strong for my taste. That being said, I should preface that by admitting I’m not someone who loves mustard, so that likely played a big role in how I experienced the dish.

Chicken Tortilla Soup
This recipe was absolutely delicious. It’s comforting, flavorful, and feels like the kind of soup you’d happily make again when you want something cozy.

Green Chili Chicken and Sour Cream Enchiladas
This has been my favorite so far. The creamy sour cream filling paired with green chiles is already great, but topping the enchiladas with fresh jalapeño slices takes it to another level.

Final Thoughts
What I appreciate most about Dinner Tonight is the flavor. The recipes don’t feel bland or repetitive—they feel layered and thoughtfully developed.
For me, this cookbook works best when I treat the process as something slow and enjoyable rather than something rushed. If you like making a day of cooking—shopping, prepping, assembling, and finally sitting down to a meal you took your time with—this book fits beautifully into that kind of rhythm.
It turns dinner into more than just a meal.
It turns it into a moment.
