A simple, cozy dinner inspired by what I already had
There’s a shift that happens when you stop over-planning meals and just let your ingredients lead.
This week, I opened my Farmbox Arizona delivery and decided I wasn’t going to overthink it. No scrolling recipes for an hour. No extra grocery trip.
Just a quiet, simple question:
What can I make with what’s already here?
Inside my box:
- Butternut squash
- Potatoes
- Yellow onion
- Cauliflower
- Carrots
And from my freezer + pantry:
- Ground beef
- Garlic, butter, seasonings
- A little pesto
- Eggs and sour cream
That’s it.
Letting the ingredients guide the meal
Instead of trying to “fit” these ingredients into a recipe, I built something around them.
I leaned into:
- roasting for flavor
- a simple, well-seasoned protein
- one finishing ingredient to pull it all together
And it turned into one of those meals that feels like you planned it…
even though you didn’t.

A quick note on what I already had
I didn’t need much beyond the produce.
I already had pantry staples like spices, butter, and even tapioca flour from a recipe I made out of Dinner Tonight.

That’s kind of the point,
you don’t need a perfectly stocked kitchen to make something good.
You just need a few solid ingredients and a little direction.
The Recipe
Roasted Butternut Squash & Garlic Beef Skillet

Ingredients
From my Farmbox Arizona box:
- 1 butternut squash, peeled and cubed
- 2–3 Idaho potatoes, cubed
- 1 yellow onion, sliced
For roasting:
- 2–3 tablespoons olive oil
- ½–1 teaspoon garlic powder
- Salt and pepper
For the beef:
- 1 pound ground beef
- 1 tablespoon butter
- 2 cloves minced garlic (or ~1 teaspoon jarred)
- 1 teaspoon paprika
- ½ teaspoon cumin
- ½ teaspoon Italian seasoning or oregano
- ½ teaspoon onion powder
- ¼ teaspoon chili flakes (optional)
- Salt and pepper
To finish:
- 1–2 tablespoons pesto
- Sour cream (optional)
- Avocado (optional)
- Fried egg (optional)
Instructions
- Preheat oven to 425°F.
- Add squash, potatoes, and onion to a baking sheet. Drizzle with olive oil and season with garlic powder, salt, and pepper. Toss well.
- Roast for 30–35 minutes, flipping halfway through, until golden and tender.
- While vegetables roast, brown ground beef in a large skillet over medium heat.
- Lightly drain excess grease, leaving a thin layer for flavor.
- Add butter, garlic, and all seasonings. Cook for 1–2 minutes, until fragrant and slightly crisp.
- Add roasted vegetables to the skillet and toss together. Cook 2–3 minutes to combine flavors.
- Turn heat to low and stir in pesto.
- Serve warm with sour cream, a fried egg, or both.
